Tuna Noodle Casserole

Tuna Noodle Casserole This recipe has lots of tuna, which is a good source of protein. It's creamy too, and pretty easy and quick to prepare. The original recipe called for WOW potato chips. I prefer to use low fat townhouse crackers, because I'm more comfortable with the ingredients.

Ingredients:

  • 1 Large Can White Albacore Tuna, packed in water.
  • 1/2 cup minced onions
  • 1/2 cup canned mushrooms
  • 1 can fat-free cream of mushroom soup
  • 1/2 cup skim milk
  • 1/4 tsp. worstershire sauce (optional)Parsley,
  • Garlic powder and pepper to taste
  • 1/3 to 1/2 package fat free pasta (I like the shells)
  • Crushed WOW potato chips or low fat townhouse crackers.

Cooking Instructions:
1. Spray a frying/saute pan with cooking spray.
2. Drain the liquid from the mushrooms and Tuna.
3. Saute the onions, mushrooms and tuna until hot and tender.
4. Add the soup, milk, worstershire sauce and spices.
5. Stir thoroughly.Separately, boil the pasta per package instructions.
6. When done, combine with the mixture above.
7. Mix thoroughly.
8. Pour into a casserole dish.
9. Sprinkle the top with potato chips or crackers.
10. Bake at 350 degrees for 15-20 minutes.
